Chocolate Coconut Truffles

It’s funny how my recipe timing always works out great. I posted my tofu popcorn chick’n recipe just in time for the Superbowl, unintentionally. And I’ve just realized that I have done it again with this one. Just in time for Easter, even though I didn’t plan it that way!

Have you been racking your brain about what to give loved ones for Easter? Instead of giving them store bought chocolate full of sugar, milk, fats and soy lecithin, why not give them something beautiful, delicious and made with your loving hands?

These truffles also make perfect snacks and dessert. I love having healthy desserts on hand, future me is always thankful that I’ve thought ahead. Instead of reaching for those store bought choc chips, I find the healthy pre-made dessert in my fridge. Thanks past Shae! And if your a total dork like me, take these to the movies to snack on.

Vegan, gluten free and raw chocolate coconut truffles that melt in your mouth.
Ingredients:
Method:
  1. In a small bowl, combine coconut and cacao.
  2. Add coconut oil, maple syrup and vanilla, stir to combine.
  3. These truffle are hard to 'roll' together as they tend to break apart. Instead, take about 1 tablespoon of the batter and squeeze together in your hand, then move it to your other hand and squeeze. Continue squeezing until it forms a ball shape.
  4. In a small bowl, put a few tablespoons of shredded coconut. Roll each ball in the coconut and place into a container.
  5. Fridge for 6-12 hours to allow the coconut oil to harden. These taste best when cold and just from the fridge.
Notes:
If the batter is too wet, add more shredded coconut. If the batter is too dry, add coconut oil 1 Tbsp at a time.

    • The awesome thing about raw truffles is you can put anything in them and they still turn out great! Love the idea – I’m adding dates to mine next time :)

  4. I tried adding ground up pumpkin seeds, a handful of chia seeds, some cinnamon and some orange rind in these and they were pretty nice. I also did a smaller batch that had more cocoa (didn’t have cacao on hand unfortunately), some cinnamon and some chilli powder, and I kind of love them. The chilli isn’t too overpowering and it’s a nice change flavour change from my usual go-to desserts.

Isn’t it wonderful how you can make delicious sweets from just healthy and good for you ingredients? Since becoming aware of all the additives in ‘regular’ supermarketfood I make most snacks myself, because there is really not that much I’d like to buy snackwise. And organic food is often so expensive, making things from scratch using organic ingredients is a great solution! Now for some extra free time…

    • Hi Hayley, I’m not sure sorry, but you are welcome to use an online calorie counting tool to figure it out if you wish. I wouldn’t worry too much about the calorie count – its all about the quality of food. And these have healthy ingredients. Just use common sense with portion size :)
