Do you get sick of spending so much time in the kitchen to keep eating healthy foods? Sometimes I do. It’s not really something you want to do every single night. You can spend an hour in there trying out a new recipe only for it to taste like crap and have nothing to eat for dinner – not fun. Or sometimes your just tired, not feeling great and don’t want to cook.
This is the recipe for those times. Still healthy, but super quick. And bonus, it tastes great.
The last few months I have been on a healing and detox plan set by my naturopath, which most days has been making me sick with headaches, nausea and fatigue – the usual detox stuff. It’s hard to find the energy to get creative in the kitchen when your feeling like that, so I haven’t and have stuck to simple recipes that I know off the top of my head.
I’m starting to have some good days again – hooray! – which is a huge leap forward in my health. But I do know that the simpler I keep my food the better I feel after. Remember to listen to what your body’s telling you about the food you eat; it will let you know what it needs and doesn’t need.
- Heat oil over medium-high heat in a non-stick pan. Add in garlic, onion and capsicum and cook for 5 minutes.
- Add in mushrooms and tomato and cook for another 5 minutes.
- Add in the chopped basil and take off the heat.
- Serve over past or quinoa, with parmesan nut cheese.
Serve this up with some parmesan nut cheeze and you have an amazing dinner within 20 minutes.
