Healing Garlic & Parsely Potato Salad (GF, Vegan, Gerson)

Potato Salad

This is just one of the many, many ways that I eat potato. Since I am having them at every meal I have to get creative! But really I usually end up doing this same potato/garlic/parsley/flax oil combo, because it’s so yum and easy. I promise I’ll try harder!

Every ingredient in this recipe is incredibly nutritious and healing. Here’s why:


Potatoes play a very important role in the Gerson diet. Despite the bad rap they’ve gotten, potatoes are actually incredibly nutritious. The basis of the Gerson therapy is to restore potassium balance in the body, and luckily potatoes are naturally low in sodium and high in potassium (higher than bananas).

In addition to vitamin C, potatoes are a good source of vitamin B6 and niacin (vitamin B3 and nicotinic acid). Potatoes are also rich in minerals, including iron, copper, manganese and tryptophan. In fact, potatoes contain all twenty-one amino acids, which are the building blocks of protein, thus forming complete proteins upon digestion.

Flax seed oil:

Another staple of the Gerson diet. A small amount of flax oil is included at both lunch and dinner. It is the only oil that’s allowed, no other fats. Not even my beloved coconut oil. Organic, cold-pressed flax oil is a great source of essential fatty acids which help carry vitamin A through the bloodstream and increase immune response. Never heat flax seed oil – heating alters the fatty acid chains and renders the flax oil harmful. It is a very temperamental oil, and needs to be pressed in cool conditions, bottled in black plastic or dark glass so light cannot oxidise it and then refrigerated at all times.

Garlic & Parsley

Always healthful, and both have many detoxing healing properties.

Healing Garlic & Parsely Potato Salad (GF, Vegan, Gerson)
Simply, quick and healing garlic and parsley potato salad.
  • 5-6 small potatoes
  • 2 garlic cloves
  • small handful curly parsley
  • 1 - 2 Tbsp flax seed oil
  1. Boil potatoes for about 15 - 20 until just soft enough to poke a knife through.
  2. Meanwhile, make the dressing. Very finely dice the garlic cloves and add the a small bowl. Very finely chop the parsley and add to the bowl with the garlic. Add in the flax seed oil and mix together.
  3. When the potatoes are done, drain them, chop them into smaller chunks and leave to cool for 5 - 10 minutes. Once cool to touch, pour the garlic/parsley/flax dressing over the top and mix together.
